Winner of the 2008 Cuisine of the Year at Taste of Nova Scotia Prestige Awards, Executive Chef Shaun Zwarun leads the culinary team at Red Dory, bringing a unique East Coast flair to contemporary cuisine.
A native of Glace Bay, Nova Scotia, Chef Zwarun - along with the husband and wife team Chef John Haines and Chef Tracy Wallace - create each dish with their own brand of East Coast flair. John and Tracy spent four years as the dynamic chef team with the Glenora Inn and Distillery in Cape Breton, Nova Scotia, where they earned a star and top 100 listing in Where to Eat in Canada.
Recipients of multiple awards recognizing their innovation and dedication to the culinary arts this culinary team raises the standard of excellence in their profession with their creativity, talent and passion for their craft.
